Juicy hot dogs coated in sweet cornmeal batter, deep-fried to golden perfection on sticks

# What You Need:

→ Corn Dogs

01 - 8 hot dogs
02 - 8 wooden popsicle sticks or bamboo skewers

→ Cornmeal Batter

03 - 1 cup yellow cornmeal (120 g)
04 - 1 cup all-purpose flour (125 g)
05 - 1/4 cup granulated sugar (50 g)
06 - 1 tablespoon baking powder
07 - 1/2 teaspoon salt
08 - 1 cup whole milk (240 ml)
09 - 2 large eggs
10 - 1 tablespoon vegetable oil

→ For Frying

11 - 6 cups vegetable oil for deep frying (1.5 liters)

# How To Make:

01 - Pat hot dogs completely dry with paper towels. Insert wooden stick into each hot dog, pushing about 2/3 through to leave a handle portion.
02 - Heat vegetable oil in deep fryer or large heavy pot to 350°F.
03 - In large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
04 - In separate bowl, beat milk, eggs, and vegetable oil. Pour wet mixture into dry ingredients and whisk until smooth and thick batter forms.
05 - Pour batter into tall glass for easier dipping.
06 - Dip each hot dog into batter, turning to coat completely. Ensure even coverage on all sides.
07 - Carefully lower battered hot dogs into hot oil. Fry 2-3 at a time for 3-4 minutes, turning as needed, until golden brown and crisp.
08 - Remove with tongs and drain on paper towel-lined plate. Serve hot with ketchup and mustard if desired.

# Expert Tips:

01 -
  • The cornmeal shell gets incredibly crunchy while staying slightly sweet inside
  • Much better than frozen versions, and surprisingly simple to pull off
  • Everyone grabs a stick and food becomes portable fun
02 -
  • Getting the batter consistency right is crucial, too thin and it slides off, too thick and you get uneven coating
  • Oil temperature drops when you add food, so let it come back up between batches or youll end up with soggy corn dogs
03 -
  • Let the fried corn dogs rest for about 30 seconds before serving, this sets the crust and prevents the hot dog from sliding out when you take a bite
  • Keep finished corn dogs warm in a 200°F oven while you fry the remaining batches
